– 1 ½ cups all-purpose flour
– ½ cup unsweetened cocoa powder
– 1 ¼ teaspoons baking powder
– ½ teaspoon baking soda
– ¼ teaspoon salt
– 1 cup granulated sugar
– 2 large eggs
– ½ cup vegetable oil
– 1 teaspoon vanilla extract
– 1 cup whole milk
– ½ cup boiling water
½ cup semi-sweet chocolate chips (optional, for extra richness)
Directions:
1. Preheat the Oven and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper for easy removal.
2. Mix Dry Ingredients: In a medium-sized bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
3. Combine Wet Ingredients: In a separate bowl, beat together the granulated sugar, eggs, vegetable oil, and vanilla extract until the mixture is smooth and slightly fluffy.
4. Add Dry Ingredients: Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start with a little flour mixture, then a bit of milk, and continue until everything is combined. Be careful not to overmix.
5. Incorporate Boiling Water: Pour the boiling water into the batter and mix until smooth. The batter will be thin at this stage, but that’s exactly what you want—it helps create a moist texture.
6. Add Chocolate Chips (Optional): If you’re using chocolate chips, fold them gently into the batter.
7. Bake: Pour the batter into the prepared loaf pan and spread it out evenly. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs attached.
8. Cool: Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
