  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice (uncooked)
  • 2 1/2 cups beef broth (or water with bouillon)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 tsp dried oregano
  • 1 tsp paprika
  • Salt and pepper, to taste
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 cup sour cream or plain Greek yogurt (optional, for creaminess)
  • 2 tbsp olive oil or butter
  • Fresh parsley or green onions for garnish (optional)

Instructions:

1. Preheat oven to 375Β°F (190Β°C).

2. Cook the beef mixture:

  • In a large skillet, heat olive oil over medium heat.
  • Add onion and garlic; sautΓ© until translucent (3–4 minutes).
  • Add ground beef, breaking it up, and cook until browned and cooked through. Drain excess fat.
  • Stir in diced tomatoes, oregano, paprika, salt, and pepper. Cook for another 2 minutes.

3. Assemble the casserole:

  • In a greased 9Γ—13-inch baking dish, combine uncooked rice and beef mixture.
  • Pour beef broth evenly over the top.
  • Stir in half of the shredded cheddar cheese and sour cream (if using).

4. Bake:

  • Cover tightly with foil and bake for 40–45 minutes, or until rice is tender and liquid is absorbed.
  • Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 5–10 minutes until cheese is melted and bubbly.

5. Garnish & Serve:

  • Let rest for 5 minutes before serving.
