Spoon the filling evenly into the center of each tortilla. Fold in the sides, then roll tightly to form a burrito shape, securing the filling inside.

Heat vegetable oil in a deep skillet or saucepan over medium heat. Carefully place the chimichangas seam-side down in the hot oil and fry until golden brown and crispy on all sides. Remove and drain on paper towels.
