Ingredients
1 whole cauliflower, leaves removed
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1/4 cup vegetable broth
2 tablespoons fresh parsley, chopped for garnish
Directions
1. Clean the cauliflower by removing the outer leaves and trimming the stem to help it sit flat in the slow cooker.
2. In a small bowl, mix together olive oil, salt, black pepper, garlic powder, and paprika to make a spice rub.
3. Rub the entire surface of the cauliflower with the spice mixture, ensuring it is evenly coated.
4. Pour the vegetable broth into the base of the slow cooker.
5. Place the seasoned cauliflower into the slow cooker.
6. Cover and cook on low for 3 to 4 hours, or until the cauliflower is tender and easily pierced with a knife.
7. Carefully remove the cauliflower from the slow cooker and transfer it to a serving dish.
8. Garnish with freshly chopped parsley before serving.
Pro Tip: For more color, you can always broil it for a little bit, but make sure to watch oven carefully.
