Prepare the Base: In a medium bowl, mix the graham cracker crumbs, melted butter, and powdered sugar until well combined. Press the mixture firmly into the bottom of a lined 9Γ9-inch baking dish to form the base. Refrigerate while preparing the other layers.
Make the Caramel: In a saucepan over medium heat, combine the granulated sugar and butter. Stir until the mixture melts and turns a light amber color. Slowly add the heavy cream while stirring continuously until smooth. Remove from heat and stir in the vanilla extract and salt. Allow the caramel to cool slightly, then pour it over the graham cracker base. Sprinkle the roasted peanuts evenly over the caramel layer and refrigerate until set (about 30 minutes).
Prepare the Peanut Layer: In a bowl, mix the creamy peanut butter and powdered sugar until smooth. Spread this mixture over the chilled caramel and peanuts. Return to the refrigerator to set for another 15-20 minutes.
Coat with Chocolate: Melt the milk chocolate and coconut oil (if using) in a microwave-safe bowl, stirring every 30 seconds until smooth. Pour the melted chocolate over the layered bars, spreading it evenly to cover. Chill in the refrigerator for about 1 hour, or until the chocolate is completely set.
Cut and Serve: Once set, lift the bars out of the baking dish using the parchment paper. Cut into squares or rectangles, and enjoy!
